Shae's Christmas Rum Balls
With Christmas fast approaching it is that time of year when we all indulge more than normal (it is the holidays after all!) and there is nothing wrong with enjoying yourself!
There will always been those things we don’t adapt to a healthier version, and hey that my friend is living YOUR life.
But, there are those things we can change up and if I am honest this version tastes better than any unhealthy ones I’ve tried before.

1/2 cup finely shredded unsweetened coconut
1 cup hemp seeds
1/2 cup chopped nuts (almond, cashews, macadamias, walnuts – whatever you prefer)
3/4 cup high-quality cacao powder
1/2 cup almond or hazelnut flour
3 tbsp dark rum, or to taste (feel free to omit or use brandy)
1/4 cup coconut oil
3 tbsp coconut sugar or your preferred sweetener (honey, maple syrup)
1 tsp vanilla extract
pinch sea salt
+ Line a baking sheet (or plate) with baking paper, set aside
+ Place shredded coconut in a small bowl, also set aside
+ Add remaining ingredients to a food processor, except the crushed nuts. Pulse until mixture forms a ball (about 30-45sec), then stir crushed nuts through the mixture
+ Take approx 1 1/2 tbsp of mixture and roll in your hands to form ball, then coat the ball in the shredded coconut. Place on baking sheet, and repeat.
+ Transfer balls to the fridge or freezer to set for one hour.
These grain free rum balls keep well in the fridge (or can be frozen) for up to a month. The perfect Christmas treat to have on hand for the festive season!
