Slow Cooked Apple Cider Chicken

This is one of those perfect set it and forget it meals that became a go to in my house, even when it was just me eating it as the leftover chicken was perfect for lunches for the coming days. 

If you didn't want to do a whole chook, this would work great with thighs too. But best part of using a whole bird is you have all the left over bones to pop back in the slow cooker add some leftover veggies and water and make your own stock - all from nothing.  Talk about no waste living. 


Ingredients

1 Organic whole chicken
4 cloves of garlic, crushed
3 shallots sliced
Juice of 1 lemon
1/4 cup coconut aminos* 
*I use Nulife Coconut Aminos
1/4 cup apple cider vinegar* 
*make sure it is a brand that contains 'The Mother' like this one

Details

+ Place garlic and shallots into bottom of slow cooker insert, then add chicken on top

+ Combine lemon juice, ACV and coconut aminos in a bowl and then pour over the chicken. Using your hand ensure chicken is well coated (I usually roll it in the liquid a few times)

+ Cook on the low setting for 5 1/2 hours, or if you short of time use high and cook for around 3 hours

+ To serve, remove flesh from bones (this will literally fall apart for you) and keep the bones for a chicken broth.  Serve chicken with some greens on cauliflower rice.  And reserve the rest for lunches and leftover dinners!
