Supercharged Seed Crackers

 

Removing foods from your diet can be super difficult, especially when you feel like you can't eat any of your favourite things.
For me when I removed all grains, I found issues with many of the healthy snack foods I used to buy with grain based flours or additives usually present.  I put off making my own crackers for ages as I thought it was too hard and they wouldn't taste any good. 
Then I made these. 
They are delicious, and could not be easier if you tried. Fool proof even (well almost, right Mum?!).  ENJOY!


Ingredients

1/2 cup pepitas
1/2 cup linseeds (flaxseed)
1/4 cup sunflower seeds
1/4 cup black sesame seeds
1/4 cup white sesame seeds
1/2 cup chia seeds (I use black, but any would work)
1/2 cup pumpkin seed meal *you can just blitz pepitas up to make this yourself
Pinch Quality salt
1 cup of water

Details

+ Preheat oven to 165 Degrees

+ Combine all the seeds and meal into a bowl and add water and stir until mixture combines

+ Line a full sized oven tray with baking paper, and then using a spatula spread the mixture as thinly as possible.  Use the spatula to smooth it out to get consistency, if bumpy and uneven it will not cook evenly.

+ Pop tray into oven, and set a timer for 15-20 min (depending on how hot your oven is).  At about 20 min, take out of the oven and either flip entire cracker over, or gently cut into squares and then flip them over to crisp up second side.  If you want a neat cracker shape then I recommend cutting up whilst half cooked as they won't break like they will when crisp. 

+ Pop back in oven for a further 10-15 min (again depending on your oven). 

+ Allow crackers to cool completely before transferring to airtight containers
